Mushroom Bacon

Sorry folks. I was bored and I have 4 bottles of liquid smoke in the garage.

 

I wanted a BLT but I didn't fancy forking out upwards of 3 quid for a pack of facon from the supermarket.

 

I had mushrooms and liquid smoke so this happened. 

 

It went fantastically on the MBLT I made with some Vegan Peri Peri Mayo. 

 

I polished off this entire portion so I'm going to say this serves one. One  greedy, greedy man who regrets nothing.

 

Special Equipment - None!

 

Serves 1

 

Ingredients:

 

Bacon Marinade 

 

4 tablespoons soy sauce (either light or dark, your choice; I used dark)

2 tablespoons maple syrup 

1 tablespoon liquid smoke 

1 teaspoon smoked paprika 

 

Mushroom Bacon

 

Spray oil

1 tablespoon vegetable oil 

Bacon Marinade (as above) 

 2 large flat mushrooms mushrooms, thinly sliced 

 

Method

 

Combine all of the marinade ingredients together in a bowl or wide dish with a whisk or fork.

 

Preheat the oven to 180°C/350°F/Gas Mark 4. 

 

Add the vegetable oil to the marinade and combine well. 

 

Marinate the mushrooms for 15 minutes. 

 

Line a baking sheet with non-stick baking paper and spray with a little oil.

 

Lay out the mushroom slices spaced slightly apart from each other.

 

Reserve the excess marinade for brushing during bake time. 

 

Bake for 25 – 30 minutes, flipping the slices and brushing with excess marinade halfway through the bake time. 

 

At the halfway mark, you may notice that any smaller pieces of mushroom are already pretty crisp. Remove these pieces and place aside until the remainder is finished. 

 

When the bacon is crisp and slightly sticky, remove from the oven and transfer to a plate or another sheet to cool completely.
