Every time I cook a pasta dish I'm always like 'that was my favourite pasta ever - that's it for me' Blah, blah , blah aye whatever. Stop talking pish mate.
So I'll change tact. This is the best pasta dish I've made SO FAR. It was amazing.
Served with hummus though it just makes it insanely good, and of course the chilli oil and olives.
The hummus idea only really came about as I had to make it relatively pretty and a dollop of pasta on a plate is not the easiest thing to make bonnie.
Give this a try, you won't regret it.
Again I used the Instant Pot to Slow cook this. It's not really necessary, you could use the stovetop and cook the pasta separately and just combine.

Ingredients:
1 medium onion, diced
6 cloves garlic, minced
2 400g cans chopped tomatoes
1 green pepper, chopped
1 red pepper, chopped
250g mushrooms, sliced
500ml water
1 tbsp tomato puree
2 tbsp Italian seasoning
250g dried pasta
Salt to taste
Method:
Add everything except for the pasta to your Instant Pot and mix together.
Cover and cook on slow cooker high for 1hr 40 mins hours. The vegetables should be tender. Using an immersion blender blend the mixture into a sauce.
Mix in the pasta and cook for a further 25 minutes. Add some water if needed to cover the pasta.
Add salt to taste.
Serve with your favourite hummus, some chopped black olives and a drizzle of chilli oil.
