Mayo & Big Mac Sauce

You'll be amazed at how quick this recipe is. Seriously.

 

It doesn't rely on carefully trickling oil into a food processor and wont split. (Well I've never had it split so I'm assuming it's fool proof).

 

This makes a plain mayo that you can let your imagination go wild on. Hence the fact I turned it into an interpretation of Big Mac Sauce here, but I'm also thinking a chipotle or smoked paprika version would be good. I mean throw in whatever you want - experiment away!

 

Special Equipment - Stick Blender

 

Ingredients:

 

125ml original soy milk (125mL)

2 teaspoons apple cider vinegar or lime juice or white vinegar

1/4 teaspoon garlic powder

1/2 teaspoon sea salt

1 teaspoon dijion mustard (or to taste - I love mustard)

250ml sunflower oil

 

Method:

 

Make sure all your ingredients are room temperature.

 

Add the soy milk, apple cider vinegar, garlic powder, sea salt and mustard in the stick blender jug or jar and stir together.

 

Pour the oil over the soy milk mixture. 

 

Let it sit for about a minute.

 

Place your stick blender into the bottom of the jar. 

 

Blend and keep it firmly pressed against the bottom for about 15 seconds while the mixture emulsifies. 

 

Slowly move the blender up and down to properly blend and incorporate all the ingredients until thick and fully combined.

 

Taste and add or adjust any ingredients if needed. Place in a sealed jar in the fridge. It thickens up in the fridge even more.

I mean, you cant really beat a dollop of Big Mac Sauce. I mean, it's the decent thing to come out of McDonalds. Apart from Gherkins. Love a Gherkin.

 

I often sit and eat whole Gherkins...which reminds me. I need to a Frickle recipe. What would work. Frickles in a Gochujang Vodka Batter with Big Mac Dipping Sauce??

Anyway here's the Big Mac Sauce Recipe.

 

Ingredients:

 

115g vegan mayo 

¼ tsp garlic powder 

¼ tsp onion powder 

½ tsp paprika 

1 tsp apple cider vinegar 

1/2 tsp white sugar 

2 tsp yellow mustard 

1 tbsp tangy burger relish 

 

Method:

 

In a small bowl, mix all ingredients together.

 

Place in the fridge until ready to use.
