Made two big mistakes here.
Firstly Apparently I dreamed I had the ingredients I needed for this. It was supposed to be Gumbo.
Secondly, I didn't write down the ingredients I actually used......hmm...so this is from memory and I have an awful memory.
However, this really is one of those recipes you can chuck any veg in and it'll still taste banging. Went really well with the sour cream that you will find under the Fajita recipe if you fancy making some.

Special Equipment - Slow Cooker
Serves 4

Ingredients (maybe, who knows??!):
2 tbsp all-purpose flour
1 brown onion, chopped
4 cloves garlic, minced
1 green bell pepper, chopped
1 aubergine, diced
400g tin cherry tomatoes
400g can black beans , rinsed
200g chestnut mushrooms, sliced thickly
5 baby sweetcorn, sliced
3 cups vegetable broth
1 tbsp Jamaican Jerk seasoning
1 tbsp thyme
Method:
Add everything except flour to the slow cooker. Stir.
Cover and cook on low for eight hours.
When done, take two tablespoons liquid out of the slow cooker and mix well with the flour. Then, pour it back into the slow cooker.
Simmer with the lid off to allow it to thicken for about 30 minutes.
If the gumbo is too thick, add more water or broth. Taste. Add pepper and salt if needed. Serve over rice with a bit of the sour cream if using.
